Macaroni and "cheese"  
My son is allergic to eggs and milk and I happened upon a mac/cheese replacement on accident. Here it is

Rice noodles
Onion salt
Vegan Grated Topping

Make the noodles as directed
Put noodles and squash in a bowl with some water. Microwave 3 minutes. The squash will turn into a creamy orange paste (like mac and cheese)
Add onion salt and Vegan Grated Topping to taste.

Maybe this is not at all unusual or creative, but I was pretty impressed with myself. It actually tastes a bit like cheese, and even more important tastes GOOD regardless of it's resemblance to cheese.

If anyone found this useful I'd love to hear about it. My son LOVED it.

what kind of squash? Here in CA we tend to have quite a variety to choose from.

Butternut. In case it made a difference in taste/texture, I should mention that the squash had been pre cooked, cut into cubes and frozen.
