A very low calorie 'simple' recipe  
100g raw button mushrooms 12
100g raw cubed courgette  17
100g raw diced celery 7
30g  raw sliced leek 7
3 Quorn 'swedish style' meatballs roughly diced and chopped upt to whatever consistancy you want (50g) 52
1 egg white mixed with a little water and some seasoning17 (But i may use two tonight...it was yummy and made it like a pasta bake a little, helped hold the whole thing together aswell, kinda like a japanese egg dish)
1 regular tomatoe 12
70g raw aubergine 10
LOADS of spices and seaoning if its your thaang ( my bestest buds right now are curry seasoning,italian seasoning mix, paprika, malt vinegar and pepper,herbs de provencale, SALT -lo-salt-) 0

.In a oven proof pot or dish (I used my dads clear pyrex dish) combine all of the ingredients except the aubergine and tomato, and maybe a little water or broth if you want, the first time i did this it got pretty dry...the second time it was kinda wet...Wet was better...
2. In a pan of water boil the aubergine till it is softened to your taste.
3.Add aubergine to the oven dish and combine again.
4.season goop (as it will look, yo uwon't be able to see the egg white solidified etc...)
5.Slice the toatoe as thinly as you can and lay it on the top forming a little bake/crust/pie/gratin look)
6. Season for the billionth time...
7. Whack in the oven with a lid on for half an hour or more (lets face it you're not going to die if its over/under cooked) at about 200'C.

So when i got this out of the oven i was actually surprised at a) how edible it looked ( normally my food resembles animal sick/poop of some kind) and b)How BIG it was...like seriously it was similar to a family sized dish...YAY!

I served it with very lightly steamed pak choi and cabbage and it yielded so SO much!
Tonight i am thinking that instead of chopping the aubergine i may just thinly slice it and make some more layering in the dish, like par boil it and make a layer in the middle of the pyrex dish...hmmm.

One of the best things was...My dad came in Just as i had got it out of the oven and said " Oh something smells good, what have you got for dinner?"
This is coming from the man who shouts at me on a regular basis whilst making snide and horrid comments about my food " You're little anorexic meals..." etc etc.
With the boiled veg
100g cabbage 25
100g pak choi 11
PLUS the WHOLE GOD-DAMN bake...we are looking at...

=153 calories
...I thankyou

Sorry, I had clicked on the community info link somehow. I came back to this post after reading about how you posted things in metrics (I'm in the US). My humor was a bit off the wall.
