A class on Gluten-free Cakes, Tortes, and Muffins  
I thought this would be of interests to some of the people here, or at least the ones from the NY area that need to eat Gluten Free. The Culinary Institute of America in Hyde Park NY is offering a course on Gluten Free Cakes this month. After my latest encounter with making a Gluten Free cake this course would have come in handy. If I had more of a client base that needed GF cakes I would be taking this class. It would be great for someone that loves to bake, but that needs to keep things GF. I know the price is high, but having had a brother that graduated from this school I can tell you that it would be a top notch course.

Damn, I wish I was there. I grew up in New Paltz and am moving back there in late April. Will have to keep my eye out for other gluten-free courses.

Have you tried the CIA in Napa?

If I see any more GF classes I will pass the information along.

Nope, never been to the CIA in Napa. I'm not really anywhere close to Napa. But I'll be in the Hudson Valley soon so I'll have the CIA Hyde Park as a resource.
